Preparing a Better Potluck

 

Operation: BeFit! Your Guide to a Healthy Lifestyle
Potlucks are a workplace tradition. People like to celebrate with food whether it is for a birthday, retirement, holiday, or baby shower. Potlucks increase morale and team work. They can also increase our waistlines if we let them. I am offering some simple and still tasty offerings that you can bring to your next event. These are healthier choices that could allow you to enjoy many more potlucks in the years to come.

 

Sandwich tray:

-Low-fat, sliced turkey

-dark, leafy greens such as spinach

-mustard spread

-whole grain breads

-tomato slices

-reduced fat cheese slices

*Avoid processed red meats, creamy/mayo spreads, white/croissant breads, and cheese dips

 

Veggie & Fruit tray:

-carrot and celery sticks

-grape tomatoes

-cucumber slices

-fresh berries

-grapes

-melon balls

*Avoid heavy cream dips, fatty cheeses and crackers

 

Casserole:

-2 sweet potatoes cut in 1“ cubes

-2 precooked chicken sausage links, ¼” slices

-2 minced garlic cloves

-4 tsp. olive oil

-2 TBS oregano

-salt/pepper to taste

-2/3 C cauliflower florets

 

1.     Preheat oven to 350

2.     Stir together all ingredients (except cauliflower) in 9x9 casserole dish

3.     Bake 30 minutes

4.     Stir in cauliflower, bake 15 minutes

 

So next time it is your turn to organize the potluck, be an example and create a signup sheet that lists healthier choices over doughnuts and cake.
